Combine oat flakes, flour, baking powder, cinnamon, and salt in one bowl.
In another bowl, mix melted coconut oil, mashed banana, and vanilla extract; then add maple syrup.
Stir in the oat mixture and let it sit for 15 minutes.
Preheat the oven to 165°C and line a baking sheet with parchment paper.
Place small mounds of dough on the sheet and flatten them slightly.
Bake for 9-12 minutes and cool on the sheet.
